Born in 1986, Fabio Aceti is the Executive Chef of Sottovoce at Vista Verona.
Among the experiences that have shaped him the most are his encounters with Gualtiero Marchesi at his restaurant in Albereta di Erbusco in Franciacorta and, subsequently, with chef Ezio Santin of Antica Osteria del Ponte in Cassinetta di Lugagnano.
After completing his hotel studies and an intense internship in Paris at Michel Troisgros’ 3-star restaurant, in 2011 he decided to broaden his culinary horizons and move to London where he worked for Michel Roux at Le Gavroche and Roux at the Landau in the Langham Hotel. It was from this great French master that he learned the rigor of the kitchen, the importance of the beauty of each dish, and the pursuit of excellence.
He continued his career in Milan as head chef at the restaurants Michelangelo and Larte before moving to the Famiglia Rana gourmet restaurant in Oppeano, near Verona, and subsequently to Tenuta Le Cave in Tregnago.
Since its opening in 2022, he has been running the kitchen at Sottovoce Vista Verona, working with local products and trusted suppliers. Proud to be part of this new reality and to be able to communicate, through his dishes, the values of authenticity and Made in Italy so essential to the Vista brand, Fabio is eager to offer guests an experience worthy of the standards of a 5-star luxury hotel.
